Butter Chicken
Tender pieces of marinated chicken simmered in a luscious, creamy tomato sauce infused with aromatic spices. A comforting classic from North Indian cuisine.

- 1.5 lbs chicken thighs, boneless and skinless
- 1 cup plain yogurt
- 2 tsp garam masala
- 1 tsp turmeric
- 1 tsp chili powder
- 14 oz canned crushed tomatoes
- 1/2 cup heavy cream
- 3 tbsp butter
- 1 large onion, finely diced
- 4 cloves garlic, minced
- 1-inch ginger, grated
- 1 tsp ground cumin
- Fresh cilantro for garnish
- Salt to taste

Marinate chicken in yogurt, 1 tsp garam masala, turmeric, and chili powder for at least 2 hours or overnight.

Grill or pan-sear the marinated chicken until charred. Set aside.

Melt butter in a large pan. Sauté onion until golden, then add garlic and ginger. Cook for 2 minutes.

Add crushed tomatoes, remaining garam masala, and cumin. Simmer for 15 minutes.

Blend the sauce until smooth, then return to the pan.

Add the cooked chicken and heavy cream. Simmer on low for 15 minutes.
