Ingredients
- 200g flat rice noodles
- 200g shrimp, peeled and deveined
- 2 eggs
- 1 cup bean sprouts
- 3 green onions, cut into 1-inch pieces
- 3 tbsp tamarind paste
- 2 tbsp fish sauce
- 1 tbsp sugar
- 2 tbsp vegetable oil
- 3 cloves garlic, minced
- 1/4 cup crushed roasted peanuts
- Lime wedges and cilantro for serving

Soak rice noodles in warm water for 30 minutes until pliable, then drain.

Mix tamarind paste, fish sauce, and sugar to create the sauce.

Heat oil in a wok over high heat. Cook shrimp until pink, about 2 minutes per side. Remove and set aside.

Add garlic, cook for 30 seconds. Push to the side, crack in eggs, and scramble.

Add noodles and sauce. Toss everything together, cooking for 2-3 minutes until noodles are tender.

Add bean sprouts, green onions, and cooked shrimp. Toss to combine.
