A show-stopping meringue dessert with a crisp shell and marshmallow-soft center, crowned with billowing whipped cream and an abundance of fresh tropical fruits.

Ingredients

  • 4 large egg whites, room temperature
  • 1 cup superfine sugar
  • 1 tsp white vinegar
  • 2 tsp cornstarch
  • 1 tsp vanilla extract
  • 1.5 cups heavy whipping cream
  • 2 tbsp powdered sugar
  • Fresh strawberries, kiwi, passion fruit, and blueberries

    Preheat oven to 250°F (120°C). Line a baking sheet with parchment paper.

    Beat egg whites until stiff peaks form. Gradually add sugar, one tablespoon at a time, beating until glossy.

    Fold in vinegar, cornstarch, and vanilla extract gently.

    Shape meringue into a circle on the parchment paper, creating a slight well in the center.

    Bake for 1 hour 15 minutes. Turn off oven and let pavlova cool inside with the door slightly ajar.

    Whip cream with powdered sugar until soft peaks form. Spread over the cooled meringue.

    Top with fresh fruits and serve immediately.
